TOFU PESTO WITH FRESH PARSLEY

Pasta, pasta, pasta. We have it on the menu at least three times per week. Each time a different shape, with a different sauce. We prefer making it with fresh pesto. It's very easy to make and it's incredibly delicious. If you haven't tried it yet, now is the time. Believe us, you'll love it!
INGREDIENTS
1/2 package of I Like Tofu Ginger & Lemon
handful of fresh parsley
roasted hazelnuts
olive oil
salt
pepper

PREPARATION

Crumble tofu into a mixer. Add fresh parsley, some hazelnuts, olive oil, salt and pepper. Mix everything until you get a smooth sauce. If pesto is too thick, add some olive oil or warm water. Combine it with hot and fresh cooked pasta.

TIP

Parsley can be replaced with arugula or basil. If you don’t like the sharpness of ginger, you can use I Like Tofu Fleur de Sel or Pesto Basilico.
